I made truffles and did NOT want to coat them...Ha! I made truffles and did NOT want to coat them, but the recipe I used (similar to this one -- I think I got it out of one of my cookbooks) would NOT firm up until I added at least an extra pound of chocolate. I kept remelting it in a water bath and adding more melted chocolate. Next time I'm using a different proportion. I've just read your link on tempering chocolate but this is new to me as I've never had to do it and I'm wondering if the chocolate we get here in the UK is different and therefore does not need tempering.
