Lemon Curd

I have a new, favorite lemon curd recipe.

This may not be groundbreaking news, but it is exciting when I find something that improves upon a steadfast recipe in my repertoire.

Lemon curd is extraordinary. Though nothing more than a combination of eggs, butter, lemon juice and sugar, patient stirring and gentle heat transforms the combination into something ethereal and quintessentially spring.

The recipe included below comes to you by way of NotWithout Salt, a wonderful blog with beautiful photography. I think it improves greatly upon my old recipe which was always a touch too tart for my taste. When served with berries (or berries and whipped cream as Not Without Salt suggests) lemon curd sings. However, I find a spoon, for dipping into the jar of curd, to be a perfectly sufficient eating companion.

Lemon Curd
Adapted from Not Without Salt
 
1 cup sugar
3/4 cup fresh lemon juice
3 large eggs
3 large egg yolks
¼ t kosher salt
1 t vanilla extract
1/4 cup (1/2 stick) butter

Whisk the sugar, lemon juice, eggs and egg yolks in a medium metal bowl. Set the bowl over a saucepan of simmering water, but do not allow the bottom of the bowl to touch the simmering water – in other words use a bain-marie.

Stir constantly until thickened, about 10 minutes, removing the bowl from the pan as needed to bring down the temperature and prevent the eggs from overcooking.

Remove the bowl from the heat and add the butter, salt and vanilla. Stir until combined. If desired, strain the curd to remove any bits of cooked eggs. Press plastic wrap directly onto the surface of the curd and chill.

Lemon Blueberry Cupcakes

I stumbled upon these delicious cupcakes while looking for something to bring into the office for my co-workers. No special occasion, just a desire to bake and not increase my waist size at the same time. My secret weapon of weight loss centers around pawning off leftovers on unsuspecting colleagues. They have yet to complain about my mode of moderation.
 
Make these for your co-workers or your family or yourself. Just make them. But beware their addictive nature if you don't have anyone on which to lovingly bestow (aka pawn off) the leftovers.

Lemon Blueberry Cupcakes with Cream Cheese Frosting
Makes 20 Cupcakes
Adapted from the Fine Cooking Blog Roll

3/4 cup unsalted butter, softened
1 1/2 cups sugar
3 large eggs at room temperature
2 cups + 1 T flour
1/2 t salt
1 t baking powder
1 t baking soda
1 cup buttermilk at room temperature
1 1/2 t vanilla
Zest of 3 lemons
1 1/2 cups fresh blueberries
1 T flour

Preheat oven to 350
Place 20 cupcake liners in two 12-cup muffin pans. Beat the butter, lemon zest and sugar until light and fluffy – about five minutes. Add the eggs, one at a time, and mix until combined. Toss the blueberries with 1 T flour.

Sift the remaining flour with the baking powder, salt and baking soda. Add a quarter of the flour mixture to the butter mixture and combine. Then add vanilla and a third of the buttermilk and combine. Repeat until the flour mixture and buttermilk are incorporated. Fold in the blueberries.

Using an ice cream scoop or large spoon, scoop the batter into the prepared muffin pans. Bake 18-20 minutes, until a toothpick inserted comes out clean. Cool pans on a rack for 5 minutes. Turn cakes out and cool completely.

Frost the cupcakes (recipe follows) and top each cupcake with a blueberry and a mint leaf (if desired).

Frosting

8 oz. softened cream cheese
1 stick softened butter
2 cups confectioner’s sugar
1/4 cup honey
Zest of 1 lemon
1 t vanilla
2 t fresh lemon juice
Large pinch of salt

Beat the ingredients in a stand mixer until completely smooth. If the mixture is too runny, add more confectioner’s sugar until desired consistency is reached.

A Multi-Purpose Dressing

Well hello there. So. It’s been more than a little while since I last posted. 10 months to be exact. Things got busy, I planned a wedding, got married, went on a honeymoon and now, almost two months after The Big Day, I have recovered from the whole wonderful, exhausting experience just enough to get back in my kitchen and start documenting it again for you here, that is, if there are any of you left after my prolonged absence!

The meaning of this blog’s name (balancing the healthy – apples - with the delicious, but not-so-healthy – butter) could not be any more pertinent in my kitchen than it is right now. Since getting married I feel I am fighting the constant battle of trying to find dishes fabulous and flavorful enough to keep my husband (my ever-so-slightly picky husband) coming back to the dinner table, while trying desperately not to regain those 10 culinary school pounds I managed to lose for the wedding. Fun times in the Stanbrook kitchen.

Battle number one. Teach husband that chicken does not have to be flavorless diet food. Far from it! When cooked just until done (not to a dried out, parched mess of protein) I think chicken is absolutely delicious. However, properly cooked chicken does not, on its own, a fabulous and flavorful meal make.

Enter the one-two-punch of a marinade and grill. The flavor of chicken cooked on a grill will always remind me of the Cornish game hens my father grilled for our family at least once a week when I was a child. Perfectly cooked, with just the right amount of char, it is quintessential outdoor living, Southern California food to me. Use the following dressing that pulls on some of the season’s best flavors (pesto anyone?) as a marinade and I think you’ve got the perfect summertime dinner.

This dressing lives somewhere between vinaigrette and pesto. If you have extra basil, make as much of this dressing as you can and use it as a condiment for cooked meats or a salad dressing; toss it with freshly cooked vegetables or throw it over pasta. I have included directions below for using it as a marinade for grilled chicken breasts.

Summer Pesto Dressing

1-1/2 cups loosely packed basil leaves
1/3 cup walnuts or walnut pieces
1 T white balsamic vinegar
2 T fresh lemon juice
1 t honey
1/2 t salt + more to taste
1/3 cup extra virgin olive oil + more as needed

Combine first six ingredients in a mini-food processor (or a regular food processor if you only have the full size) and pulse until combined. Add the olive oil and let the processor run until the oil has blended and somewhat emulsified with the other ingredients. I like to leave this dressing chunky, but if you prefer a smoother dressing, continue blending and add more olive oil until your desired consistency is reached. Taste and adjust seasoning.

To use this dressing as a marinade for chicken breasts:

Using a sharp knife, make three slashes in each breast, only cutting about 1/8” to 1/4”-inch into the breast. Reserve 1/2 of the dressing to serve as a condiment for the cooked chicken or to use later as a salad dressing. Rub 1/2 of the remaining dressing over the breasts and let them marinate in the fridge for as much time as you can – 30 minutes to three+ hours.

Fire up your grill. Let your chicken breasts start to come to room temperature while your grill heats up. Place the chicken on the grill and adjust the flames/charcoal to prevent flare ups. Close the grill cover and only lift it occasionally to baste the chicken with the remaining dressing. I wish I could tell you how long to cook the chicken, but every grill and every chicken breast is different. My chicken breasts were not gigantic and it took about six minutes on the first side and an additional four to five once I flipped them over. If your chicken is getting too black before finishing cooking, move it to a cooler area of the grill or a raised shelf and let it finish cooking with the grill cover closed. Serve the chicken with the remaining dressing.

Butter Bean Salad

I love butter beans. Growing up, we had what we called lima beans as a side dish at least twice a week. My mother would drain the lima beans (always from a can – never fresh in those days), heat them up and serve them with butter. I used to mash up the beans on my plate, incorporating their silky butter coating into a butter bean mash. I didn’t know it at the time, but I was creating one of my favorite ways to serve butter beans (and most beans for that matter) - whizzed with a little butter and served as a side dish in place of mashed potatoes.

The other way I serve butter beans is in a cold, deli-style salad. I make healthy, hopefully delicious, deli-style salads almost every Sunday. I whip up a large batch and bring it with me to work for a week’s worth of lunches.

This butter bean salad is very simple to make and holds up well (actually improving in flavor) after a few days in the refrigerator. Beans, tuna, a little lemon for brightness and green onions are the stars. Add salt, pepper and olive oil and you have a great salad that will keep you fed throughout the week.

I like this salad just on its own, but I added some toasted, garlic-rubbed slices of baguette for a little more heartiness for the boyfriend. It would also be great served over a bed of lettuce or added to pasta for a cold pasta salad.

Butter Bean Salad
Serves 3 – 4

1 can butter beans
2 cans solid white tuna (I use water packed)
Zest of one lemon
Juice from one lemon
2 – 3 T of extra virgin olive oil
4 green onions, cut in half lengthwise and thinly sliced
½ t salt
¼ t of freshly ground pepper

Drain and rinse the butter beans. Drain the tuna. In a medium bowl combine the lemon zest, lemon juice, 2 T of olive oil, the onions and salt and pepper. Taste the dressing and if it is too tangy from the lemon, add an additional tablespoon of olive oil. Add the tuna and beans to the dressing and stir until combined.

Mayonnaise - How to Cheat

One thing I have noticed over the years is that mayonnaise is an oddly divisive substance. Many hate it with a passion, refusing to let it so much as touch a piece of sandwich bread, while others love it, slathering it on artichokes, mixing in herbs and calling it a sauce, even topping the occasional plate of scrambled eggs with a dollop just because they can. I am a card-carrying member of the latter group. It may be because both my parents are from the South where mayonnaise is more of a staple ingredient than just a condiment. Not a day went by at 3752 Chevy Chase Drive that we didn’t have a huge jar of Best Food’s (Hellman’s for you East Coasters) in the fridge, with another one on standby in the cupboard.

My appreciation of mayonnaise seemed perfectly normal amongst my own kind. In fact, I didn’t realize there was anything wrong with my level of mayonnaise consumption until my sophomore year of college when my roommates looked on, horrified at my decision to fold up pieces of Kraft American singles and dip them into my oversized jar of mayonnaise as a snack. Clearly, my gourmet tendencies had yet to take hold.

For someone who loves mayonnaise as much as I do, I find it surprising that this past weekend was the first time I tried to make mayonnaise at home. I guess it’s due to my devotion to Best Food’s. I never saw the need. I am here to tell you that I have been reformed. I still love my Best Food’s, but there is something completely different and luxurious about homemade mayonnaise. I am also here to tell you about a few mistakes I made with the first two attempts that never emulsified. Making mayonnaise is not as simple as it seems.

If you’re not in the Los Angeles area, then you don’t know that it topped 100 degrees this past weekend and not just in the Valley. It was a hot one and without the benefit of any air conditioning, the idea of vigorously whisking egg yolk while slooooowly adding oil, drop by drop at first, seemed like too much physical exertion for such a hot day. I decided to take a lovely looking recipe from Michael Rulhman and make it in my blender. After all, the blender will certainly whisk vigorously while I have my hands free to add the oil drop by drop. Right? Not so. It turns out, according to The Joy of Cooking, that you need to have egg white included in the recipe if you’re trying to make a blender mayonnaise. Clearly J o C must know what they’re talking about so I transitioned to their recipe which called for using a bit of egg white in addition to the yolk and a Cuisinart instead of a blender. I fitted my Cuisinart with the plastic blade as directed and attempted batch number two. Still no emulsification. Perhaps I added the oil too quickly? Possibly, but I have a sneaking suspicion that the plastic blade did not create enough agitation to get the mixture to emulsify.

Already having dirtied two of my major kitchen appliances, I eyed the third. Epiphany. If I used the whisk attachment on my KitchenAid mixer, then who, other than the all-seeing kitchen Gods, would ever know that it was, in fact, a mixing machine and not my own arm that was attached to that whisk? I reverted back to Ruhlman’s recipe and in about five or 10 minutes had a wonderful mountain of homemade mayonnaise sitting in front of me. Success. Who says cheating never gets you anywhere? Truth be told, the energy exerted while washing all of those appliances is at least equal to, if not more than what it would have taken me to whisk the darn thing by hand in the first place.

My final tip on homemade mayonnaise? Once you have succeeded in getting the mixture to emulsify, for God’s sake, don’t ruin it by throwing it in a blender to add fresh herbs. I lost two thirds of my beautiful mayonnaise by trying to turn it into basil mayonnaise in the blender. I managed to break the emulsification and ended up with a runny purple mess in front of me (purple basil). Thank goodness I had set some aside that I was able to combine with hand-chopped basil.

I served this basil mayonnaise next to a gorgeous skirt steak that the boyfriend grilled, but it would be equally delicious on just about any kind of sandwich.

Mayonnaise
Adapted from Michael Ruhlman

1 egg yolk
1/2 t salt
1 t lemon juice
1 t water
1 cup vegetable oil

Place egg yolk, salt, lemon juice and water in the bowl of a mixer fitted with the whisk attachment and whisk on medium to combine. Pour vegetable oil into a glass measuring cup, preferably with a pouring spout. Turn mixer up to medium high and use a spoon to add the oil to the mixer, drop by drop, until about a third of the oil is mixed in. You should see the emulsification coming together as a thick, white, creamy sauce. Each time you add oil you will see the emulsification loosen, then come together around the whisk and then start sticking to the sides of the bowl again. When the mixture sticks to the bowl, you know it’s safe to add more oil. I used the spoon method for the entire cup of oil, mainly because I had already broken two emulsifications that afternoon. If you are brave, feel free to start adding the oil in a slow drizzle after the first third is successfully incorporated. Once all the oil is incorporated, you should be left with glorious, luxurious mayonnaise. Use as you will.

Pavlova with Lemon Curd and Berries

I’m certain that when Anna Pavlova visited New Zealand in 1926 she was more concerned with the quality of her ballet performances than of the desserts she consumed. Fortunately for us, a local chef troubled himself with the later and created a dessert in her honor that consists of a pillow of meringue, topped with whipped cream or lemon curd (or both) and finished off with a scattering of fresh fruit. Best of all, it looks terrifically impressive and is perfect for company, but it’s also completely manageable if you’re willing to commit to a multi-step dessert.

I was willing to make such a commitment for a recent Sunday afternoon meal. However, my only company was the boyfriend and he thinks – or at least pretends to think – that everything I make is terrifically impressive (another one of the many reasons I keep him around). In the absence of guests to impress, I went ahead with the Pavlova recipe because really, when have I ever let the absence of an audience stop me from making something delicious?

And the Pavlova was delicious. It’s truly an exercise in varied textures. The crunch of the outside of the meringue contrasts with its marshmallow-like interior - achieved through slow and low cooking in the oven - and the creamy tartness of the lemon curd plays off the firm sweetness of the fresh fruit topping. All of these components come together to make not only an enjoyable mouthful, but also something beautiful to look at. And if you look closely, you may be able to imagine the ballerina’s tutu that inspired that pillow-like base.

The next time around I may add a little more sugar to the curd or use Meyer lemons as the tartness actually turned my tongue raw. Or maybe next time I will stop at one or two helpings instead of carrying on to three or four. Either way, your choice. I’ve included the recipe as it was printed in the April issue of Gourmet.

Pavlova with Lemon Curd and Berries
Adapted from Gourmet Magazine

Meringue:
1 cup sugar
1 T cornstarch
3 eggs at room temperature for 30 minutes
3 T cold water
1 t white vinegar

Curd:
3 egg yolks
2/3 cup sugar
1 T cornstarch
1/8 t salt
1/3 cup fresh lemon juice
4 T (1/2 stick) unsalted butter
2 t grated lemon zest

Assembly:
1 cup heavy cream
4 cups mixed berries

Preheat oven to 300*
Meringue:
Trace a 7-inch circle on a piece of parchment paper cut to fit your baking sheet. Turn the parchment over and place on the baking sheet. Whisk the sugar and cornstarch together in a small bowl. Place the egg whites and a pinch of salt in the bowl of a stand mixer fitted with the whisk attachment and beat at medium speed to soft peaks. Add the cold water and beat to soft peaks again. Increase the mixer speed to medium high and add the sugar and cornstarch mixture one T at a time. After the all the sugar has been added, beat for one minute more. Add the vinegar and beat for approximately five minutes until the eggs hold stiff peaks. Use a spatula to spread the meringue inside the circle drawn on the parchment paper. Shape a small crater in the middle by forming the edges higher than the center so you will have a place for the filling. Bake for 45 minutes until the meringue turns a tan color. Turn off the oven and prop open the door with a wooden spoon. Cool the meringue in the oven for an hour.

Curd:
Whisk the egg yolks together in a small bowl and set aside. Stir the sugar, cornstarch and salt together in a medium saucepan. Place the pan over medium heat and add the lemon juice and butter. Bring to a simmer and continue to cook for one minute longer, whisking constantly. Temper the mixture by adding a 1/4 cup of the lemon and butter mixture to the egg yolks in a small drizzle, whisking constantly. Whisk the tempered egg yolks back into the pan with the remaining lemon mixture. Reduce the heat to low and stir constantly for about two minutes longer, until the curd has thickened. Stir in the lemon zest and transfer to a bowl. Cover with plastic wrap directly on the surface of the curd so a skin does not form and chill until cold 1 – 1 1/2 hours.

Assembly:
Beat the heavy cream until it holds soft peaks. Use a spatula to gently fold 1/4 cup of the whipped cream into the lemon curd. Spread the lemon curd over the crater in your meringue and pile berries on top. Serve with the whipped cream to cut the tartness of the curd.

Lemon Thyme Sorbet

A frozen dessert is not the obvious choice to end a dinner served in January. Living in the moderate climate of Southern California had something to do with it, but the main reason was trying to find a lighter finish to a rather heavy meal and I think this was the perfect end to our dinner. For me at least. You can ask my dinner guests for their opinion. 

We paired the tartness of the sorbet with raspberries and blackberries and to add a hint of sophistication, thyme sprigs are steeped with the lemon zest and sugar before the sorbet is frozen. The herb flavor is very light and I will steep more sprigs the next time I make this dish. If you're up for it, go heavy on the thyme. For a moment I considered leaving thyme leaves in the mixture to complement the beautiful flecks of yellow you get from the lemon zest, but ultimately decided against it. Let me know if you go for it. I'd love to know how it tastes!

Lemon Thyme Sorbet
Makes 1 pint

2 1/2 cups water
1 cup lemon juice
1 cup sugar
zest from 2 lemons
4 thyme sprigs

Mix water and sugar together and bring to a simmer with the thyme sprigs. While the water and sugar mixture is warming, zest two lemons and add the zest to the pot. Simmer very gently until the thyme is fragrant. Chill mixture thoroughly (with the thyme sprigs still in the mixture). Juice enough lemons to get one cup of lemon juice (about six lemons depending on size). Add the lemon juice to the chilled syrup, remove the thyme sprigs and freeze according to your ice cream makers instructions.

Preserved Lemons

I recently bought a couscousier to try a better way of making couscous at home (more to come on that in future posts). While reading up on different cooking methods for couscous, I've seen a lot of writing on preserved lemons and decided to try my hand at making my own.

Preserved Lemons
2 pounds organic lemons
1 cup salt
3/4 L canning jar

After scrubbing the lemons, cut half of them into quarters and toss with 1/2 a cup of salt. Place 1/4 cup salt in the clean canning jar and add salted lemons. Juice the remaining lemons and mix the juice with 1/4 cup of salt. Pour over slices in the jar. Make sure the rim of the jar is clean and close the lid to form a tight seal. Leave the lemons out on your kitchen counter for the first few days and then move to the refrigerator until three weeks has elapsed. At this point, the preserved lemons should be ready to use.

*A little disclaimer: this is my first time making preserved lemons so it's as much of an experiment as anything. I'll post updates over the next three weeks on how they're doing.
