I tried Ellie Krieger's recipe for triple chocolate cookies recently and while I still prefer the full force, butter-filler cookies I normally make, these ones are a great substitution when I'm trying to be good. I never thought 1 tablespoon of batter would make a big enough cookie, but one or two of these guys and my chocolate craving is satisfied.
Adapted from The Food You Crave
by Ellie Krieger
Makes 20 - 24 cookies
(depending on how much batter you eat)
1/4 cup butter
1/2 cup brown sugar
1/4 sugar
1/4 cup canola oil
1 egg
1 t vanilla bean paste
1/2 cup flour
1/2 cup whole wheat pastry flour
1/4 cup cocoa powder
1/4 t kosher flake salt
2 oz 62% dark chocolate, chopped
2 oz 72% dark chocolate, chopped
Preheat oven to 350*
Blend the butter and sugar together using the paddle attachment. When light and fluffy, add the oil, egg and vanilla and mix until combined. In a separate bowl, sift together the flours, cocoa and salt and add to the butter mixture in stages. Stir in the chopped chocolate and place the batter in 1 tablespoon scoops on a cookie sheet. Bake for 12 minutes and let cool slightly on a rack before enjoying!

Soooo true. I definitely eat the batter!
You have such good recipe, I can't wait to read more. I am going to the gnocci next!
This sounds like my kind of recipe! I think I would have to pull myself away from the batter because I am sure it is quite good!
Cannot resist that title. They look and sound great.
I like to think of chocolate as healthy since it's loaded with antioxidants. :-) This cookie recipe looks delicious and so worth trying.
I haven't tried this recipe yet from her book but they look like they turned out great. I also sneak quite a load from the batter bowl from time to time! That is the best part about making cookies.
There you go again- posting a recipe that is making me positively drool. I love that you used whole wheat flour.
Triple chocolate? You are killing me here. These look amazing!
Found you from Kristen's blog -- so glad to discover you on a day when you've made chocolate cookies!

Waving hello! Just popped over from Dine & Dish and wanted you to know I LOVE how you came up with the name for your blog---it makes perfect sense (and I'm in total agreement about striking that balance)!
Hope your adopter/adoptee match brings you lots of new ideas, and I wish you many days of blogging success.

First off, fabulous blog with incredible photos! I love your description in your profile of your struggles with producing delicious but healthy food. Its something I constantly struggle with as well! Its def very easy to make delicious food (thats really bad for you) and healthy food (that tastes like poop) haha. Ellie Krieger is incredible! I wish they had more healthy based cooking shows on the food network! I am going to add you to my favorites!
